there is a (indispensable to me) mod that adjusts xp to whatever you have when they first join. There is also one that allows you to choose their class and proficiencies before the game starts.
You mean Gatekeeper for BG1 vanilla and Shadow Keeper for BG2/BGT/Tutu?

From memory you can get the Beregost Blacksmith to make them for you, although I've only ever used the one I found in the game world.

There's two available, as Sensuki said: one of them if hidden in the game world, the other can be commissioned from Taerom Fuiruim, the Beregost blacksmith, if you provide him with an Ankheg carapace (dropped by every Ankheg). There's also a mod that allows you to order them multiple times from Taerom.

I always considered this hidden one as cheating, why the fuck is it just lying around there randomly? I wonder why the devs put it there.

There's actually A LOT of easter egg item stashes like that. There's a Diamond in a tree in the very first area outside of Candlekeep. Ring of Wizardry buried under a tree at the Friendly Arm Inn. Ring of Fire Protection in the most south easterly area. And so on and so forth.

I actually really enjoyed finding these too.

The old Baldurdash dialogue patches actually added hints about where those easter egg stashes were to the dialogues of various NPCs. It was kind of fun, though not for purists. Arguably those stashes were never meant to be found in a standard playthrough.

I didn't even know about the stashes until I was checking gamebanshee to make sure I hadn't missed any side quests on a recent playthrough. Still didn't bother with any of them, it really does feel like cheating.

Same here; I wasn't aware of the hidden treasures until I read a walkthrough after I finished the game. To be fair, there's not that many of them.
I can only think of the Ring of Wizardry, Wand of Frost and the Ankheg Plate off the top of my head.

There's a Ring of Protection +1 in the area between Friendly Arm and Beregost too and I think Wand of Frost is Nashkell Mines Exterior.

I never found the Ankheg armour during my first playthrough. When I looked at a walkthrough afterwards and saw I'd missed it I checked to see how easy it was to find... it was literally one pixel. Even knowing where it was I had to use the coordinates to find the exact spot.

It's not one pixel it's like 4 pixels :P

They did have an object highlighter for BG2, but using the secret doors function to detect hidden caches like that would have been the best way to do it, rather than them just being obvious straight away.

Nope, that's when I learned it was necessary to find shit.

Seriously, exploration by the means of items that are actually invisible until found, isn't good design.
Why was it difficult? You killed a dozen of Ankhegs, and each dropped an ankheg plate, if was right in front your eyes.
