I'm a big werewolf fan, especially when they're done very exaggerated and menacingly like in The Howling (in other words: no "big wolf" bullshit, make it look like a monster). I wish more RPG had them. Dragon Age Origins did, but they were still kind of lame for some reason.

Hoards of the Underdark had one. Just like that game had lots and lots of Dark Elves too! And, amazingly, massively rated game... Ultima I's first quest is a jelly as well, I believe, another highly rated series...

Icewind Dale II had a cool Werewolf segment, as did Baldur's Gate II and the Icewind Dale I expansion Heart of Winter. I used to think they were common and overused, but a long recent drought has restored their necessary return!

More seriously, anything that bypasses conventional restrictions and thus more interesting to fight than your ordinary brick of HPs.
Lands of Lore style ghosts, undead *if* the game has detailed damage system, stuff you can't just fight for many reasons, etc.

Anyone seriously responding with <insert especially dorky dnd monster here> should be asphyxiated by having his head stuck into roving mauler's other side.
