Well, Lara Croft pioneer in strutting her stuffs, which is nothing to sneeze about.
Still, another game that has huge yet not publicly recognized influence on rpg is probably FF8. FF7 is still under big influence of western RPG so it's actually not a huge step forward as everyone thought. FF8 give you cutscenes in big number, cinemaesque gameplay, video in anything they can. Its system of fully customizable armor and weapons are a bit too advanced for its age (and a leap from FF7 materia system) so no one dare replicate but any other easier features are gleefully copied. I think you can blame many current obsessions of gamemakers (cutscenes, video, shiny graphics) on FF8's shoulder.
Fallout too, I suppose. The freedom in gameplay is simply too pronounced compared to other's, much better than MM8 (the high level enemies in other areas will have you for lunch nomatter what you do). The sandbox style is fully developed here, I think.
