Fastillion's lighthouse is a well-designed dungeon crawl. Home to an eccentric wizard, eleven atmospheric levels fallen into disrepair with monsters running loose. A giant vortex in the middle, and the various floors full of secrets and trickery. I think it is one of the better dungeons in the Gold Box series.

This floating being is highly intelligent and likes to makes its lair in ancient forests where the power lines flow strongly or in deep mines where there is plenty of gold and gems. The Beholder often surrounds itself with enslaved guards from races stupid enough not to flee it in time. Other than floating over power lines, it is believed that the Beholder likes gold much like Dragons. Like Dragons, it also enjoys eating both Deer and Dwarves when it gets hungry. In practice it is probably mostly Dwarves, because it will get less hungry when it is floating over the power lines in an ancient forest.

One of the most powerful spellcasters from the Conquest of Elysium games, set in the Dominions universe.

*I sent them a bug report, because it wouldn't export to PNG properly; without merge artifacts. It was fixed within hours.

Make the Codex Great Again!
There were beholders in TES Arena during development, but they replaced them with a different flying enemy that shoots magic at you. The homunculus is still referred to as a beholder in the game's files. It's interesting to think how the Elder Scrolls bestiary would have changed if they didn't have to redesign the enemy, as the homunculi basically led to imps. Though as far as giant-eyed tentacle monsters go, Hermaeus Mora isn't too far off the mark.

Chaos Spawn in Master of Magic:

latest

Its basic stats are meh, but its (piss-poor) melee attack is automatically preceded by the application of several magical "eye beams:" one causes fear, one is save-or-die, one is automatic damage that can't be ameliorated by anything, and one turns the target to stone. Most targets won't live long enough for the actual melee attack to come into play.

It could quite possibly take out an entire army of melee units single-handed, assuming the enemy doesn't have high-level heroes. Goes down to concentrated archer fire in a jiffy, though.
