The differences on this in the various wiki languages are interesting. From the german page:

Basically saying that the reason for the delay are not clear: Trepidations of the leader (with respect to the battle itself or political/religious ramifications of attacking first) or tactical considerations with respect to heat/exhaustion of the enemy. And their horses.

It depends what they are wearing, if they are wearing winter clothes they will notice their balls are sweating but if they are naked it will be a pleasent weather for them. Also it depends what race they are, Yuan-ti like the 20's and I think they don't have testicles.

The delay was not that long as mostly assumed. What we presumably know is that there was a second church mass and perhaps an additional hour or two for bringing the forces into place. So Tarnbull states that the delay was around 2 hours at lower estimates and we could put that higher estimates it was 4 hours. So the Battle started between 10-12 o'clock.

White people are smarter and the most creative due to the needs to survive during cold climate.
That's probably why the early advanced civilizations first sprouted around frigid places like Mediterranean and Tigris/Euphrates valley.
Food is the answer to your statement. For a civilisation you need a certain amount of people living at a certain area and that is only given if you can support them with enough resources. But if you don't have enough food than you cannot have a civilisation no matter how smart people are and this region (Middle East) is known as the fertile crescent, because it was the first region which supported agriculture in that amount.
