So it seems that you have very good taste and you game a lot, and so there is not much I can throw your way, unless you're willing to play lesser good games - maybe in order to value the better ones out there (I guess). You also seem to play a bit of ARPGs and so I will dip into the Japanese school, within reason and limits of sensibilities.

So, take these with a grain of salt:

- Septerra Core (bonus points if you can tell who's Gunnar's voice is, might be boring, remember undead can be killed with healing items)
- Dark Souls (it may come across as popamole to you, but, regardless, it's still a good game to have under your belt)
- Recettear: An Item's Shop Tale (do NOT be fooled, this may come across as a stereotypical Japanese kawaii desu ne game, but it can be mechanically challenging, especially if you're a completionist)
- Kenshi (Fluent killed Codex's opinion on this one, simply because he played it, but it is, in fact, one of the better RPGs out there)

I can't recommend anything else with a clean conscience; I mean even these ones may not be exactly up to par for you.

*this one doesnt count as garbage menu based game because it actually looks good

hmm, if this is the case, then you should probably check out wasteland 1 remastered when it comes out in a few months or something if ancient visuals are a barrier for you

Haven't tried yet but i heard that Fallout Tactics is decent.

Kenshi wasn't enjoyable for me. These games with no goal where you have to make your own fun just never hold my interest. Even Minecraft, a game I watched religiously as a kid before I bought it at like 12 or 13, didn't manage to capture my attention until I found good servers for me to play on (probably put thousands of hours into that game, good times).

I would try out Realms of Arkania I-lll (especially the 2nd part). Talking about the originals, not the garbage remakes/hd versions.
Movement is in first person, but the combat is isometric.
They are old, yes, but the graphics are very charming and have aged well.

I find he setting superb (i play it like a sandbox, just to fuck around the place) so it's not garbage tier to me, but your statement really hit the spot.
