So, what's the alternative if you want an excellent and quality blobber with a modern UI? Because I know those things aren't going to be found here

In Legends of Amberland, you can mouse hover over almost every aspect of the UI and get a description.

Its graphics aren't modern by any stretch, but the overworld exploration and party customization beats BT IV hands down.

It did run like a dogshit but it's not a shewter, it's a grid-based, turn-based blobber. It's not like having 30 FPS is a terrible problem for this kind of game. But style and vibe is.

There are many clones of Wizardry 1-5 (all the JRPG's) - and there are many Dungeon Master clones with RT combat, eg. Grimrock and all the rest.

The only game that is similar to Wizardry 7 is Grimoire and so far there have been no clones of Wizardry 8.

Might & Magic also doesn't have many clones, only Legends of Amberland recently.

Also, framerate can be bruteforced by expensive, or even not so expensive hardware with time. Fancy shadows and other graphic stuff once removed will remain removed.
I mean these could be removed... with graphic settings in the main menu, like it used to be the case with PC gaming and no one would complain.
