Which enemy to kill first?
Weak enemy that does low damage or strong enemy that takes longer to kill but do more damage?

Usually the weak ones, depending on the game mechanics.

Weak enemies are essentially DOT (damage over time) spells. If it takes you 3 minutes to kill the boss, you will be accumulating the damage from those DOT spells over the entire fight. If you "decurse" yourself quickly at the start by killing the weak enemies, you won't be accumulating all of that extra damage.

From weakest to strongest is usually a good, proven tactic. If you can incapacitate the stronger enemies then even better.

Also for roleplay reason you take out first the henchmen and then the Big Boss.
My little brother dared sway from this rule and was killed by a puny skeleton after taking out Death Bringer in the PC version of Golden Axe.

Depend on terrains and conditions.

First Priority is on summoners. The longer they live, the more firepower they put on table.

But if you can arrange for those easiest target surround your own meatshields and allow their ineffectual attacks to fall on our hard armors... heh heh heh. then it's time to ignore them to form a natural barrier to prevent those hard hitting melee targets from reaching our own, and range attack others, like squishy mage and cleric first.

Hit them all with your most powerful AoE alpha strike, then pick off what's left prioritized by turn order in TB or threat in RTwP / RT.
