What is/are the best RPG's you've played on a computer (Amiga, C64, ZX Spectrum, Atari, MSX, etc) that don't exist for PC but you think deserves a proper remake and still hasn't been made?

Since the original devs of those games are no longer active, nothing.

Other people shouldn't mess with intellectual property that does not belong to them, for they will only fuck it up.

I think a lot of '80s games could be improved upon, but whether or not someone would be capable is another question entirely. You could do a very good Lords of Midnight remake with modern technology, but nobody would make it, would they? A lot of Mike Singleton games are like that, concepts that would be amazing today, but were executed without the technology to make it that great. I think you could make something absolutely incredible out of Elvira if you made it into 3D, but I've seen that Waxworks remake, and that didn't go well. Legacy - Realm of Terror was very rough around the edges, but buying the license for that would be kind of pointless.
Spiritual successors are better, because if someone screws that up, who cares?
