Quake - got me interested in how games are made, plus it's great
Noita - insane, endless possibilities
Team Fortress (mainly TF2 but others are good too) - simple, goal oriented, great interaction, support
Fallout New Vegas - not flawless but has lots of details that work nicely together, very design-y, fun to wander around...might have reached my limit with it but my most replayed RPG, more than even classic Ultimas
Galaga - simple perfect arcade game

Still my favourite sandbox stealth FPS

-Stronghold Crusader
just the perfect mix out of RTS and city building

-Beyond Good & Evil
I just love this strange world and Jade is my bae

-Rollercoaster Tycoon 2
literally, my whole family worked at an amusement park so I spent a lot of my childhood there and RCT2 allowed me to build my own. Today it reminds me of that time, besides it's a fantastic management sim.

The game that made me fall in love with party-based CRPGs

4. GTA:Vice City. Dumb fun distilled.
5. Ultima Underworld. No immsim has ever come close to its greatness.

I can't say there are any older games that I've loved that I still keep coming back to today. I eventually get sick of even much-loved games (of which there have been many, RGPs and general) after I've played them two or three times and know them well; plus I'm a graphics whore and I can't play a game any more beyond a certain threshold of graphical oldness. I've had more of a "keep returning" thing with multiplayer games and MMOs I've enjoyed. Some games that I've revisited several times over a period of 3 or 4 years running, roughly in chronological order, have been:-

1) BG2
2) City of Heroes
3) Warframe
4) The nuXCOM games
5) Latterly, PF:K

I must confess I've also loaded up some of the Bethesda games every now and then over periods of years - you know, just to see how far the Loverslab folks have gotten with physics and that *ahem.* Purely academic interest, you understand.

Fallout 2 (seemingly always have some sort of character chilling waiting to be played)
Thief Gold (great official missions and fan missions)
Deus Ex (every few years)
Daggerfall (every so often start a character for some good old fashioned dungeon crawling, only completed the main quest once)
[Catch-all option for any boomer FPS on the doom or build engine] (Come back to these constantly)
