I dont know shit on the hotkeys
F1-F12 use basic abilities like thieving or detect traps. You can hotkey spells too. Not overly complicated. Read the manual if you're having trouble. I found the interface very straightforward.
Baldurs gate 1/2 and Fallout 1/2 are my personal favorites, definitely play those.
Planescape torment is also great even though its not as combat focused. It's much more story and dialogue focused with excellent artwork, companions, characters and locations. I'd roll a mage with max wisdom, intelligence and charisma to get the most out of the game. Don't be a fighter or a thief. You'll miss out on the coolest dialogues and lore. Basically the dumpstats in other infinity engine games are the strongest here.
Underrail is a more modern isometric turn based game that has excellent tactical combat, crafting that is actually enjoyable(how the fuck they managed that is quite a feat), and great exploration. Tons of character building options, my personal favorite being a spec ops dude that uses burst smgs, grenades, stealth, lock picking, crafting, etc. Lots of movement points and versatile but not a lot of health. Makes for a tactical experience. But there's literally so many Underrail builds you can make anything work. A more modern classic with great world building that refines the classic systems of old with the result being all around better combat.
Wasteland 2 I can also recommend. It's not as good as the classics but the encounter design is good and it's nice building your whole party. I would go in blind and just build a bunch of rangers to suit what you want to do, ie lock picking, a melee guy, an smg dude, etc. There's companions but you don't want to be sharing the same weapons generally. Shotguns suck so don't even try. Energy weapons are great but you won't get them till later. Like all turn based games you need initiative and action points. The rest is up to you. Companions can cover bases your core rangers lack. It's not as interesting as the classics but I enjoyed my run a few years ago. Not a pretty game and full 3d in the unity engine.
Then there's arcanum which definitely worth a play through. Lots of interesting stuff going on there with also non shit crafting. The music is repetitive and it's easy to break the game but you don't have to. It mixes real time with turn based action point combat you can toggle at will. Helpful for the heavy amount of trash mobs. Build an interesting character. Like Fallout, the world responds ie if you make a very unintelligent character your character will barely be able to communicate with anyone. Back stories are cool too. It's rough around the edges but I think you'll dig it for a playthrough.
If you like fallout Atom is decent. Amateurish in many places but a decent Soviet version of fallout. Not nearly as aesthetically pleasing because it's all 3d unity engine stuff so expect bloated saves, longish load times etc. Not nearly as good as fallout but fun nonetheless.
Then there's ARPGs. Diablo 1 and 2 with lord of destruction are simple fun but can get really hard and complex. Classes are distinct. I like skeleton necromancers and amazons but the sorceress is great too. Path of exile is good and free with a huge skill tree and loads of builds to make. Basically what Diablo 3 should have been. Haven't tried Poe2 but pretty soon I'll have a free early access code to try it.
Sacred is another solid arpg where you can call your horse anywhere. At the time that was groundbreaking even if it seems basic now. It's been so long I don't have much to say on this one but I liked it at the time.
Basically there's not necessarily a shortage of options. Just go with whatever seems most up your alley. I think Baldurs Gate and icewind dale along with Fallout have aged great and are just as fun today, especially if it's a first playthrough. Learn the controls, learn the systems and you'll have a great time. There a reason me and countless others here return to these games even though we've played them to death. They are still fun and there are so many different options and paths to experiment with.
One final note, I'm sure someone will recommend pathfinder kingmaker or wrath. I would not. The former starts strong but past act 3 really sucks. Wrath is a bloated mess. More unity engine shit with stat bloated samey mobs make the whole thing tiresome. Then there's the 100 or more classes and archetypes, many of which don't really have a reason to exist. They are real time sinks with little to no likeabke characters and bad narratives/pacing. Then there are the terrible minigames you're forced to participate in. This is especially true for Wrath with its boring crusade minigame that's slow and plays like a cheap and boring might and magic. There's very little worthwhile exploring like baldurs gate. Quests are boring. Locations are a bare minimum. I'll never touch them again and I regret wasting the time it took me to complete wrath. Dumped kingmaker sometime in act 3. They just don't have the it factor the classics do, even if they look similar they're just missing way too many important things that made the classics great. People knock Baldurs gate for trash mobs but holy fuck does owlcat dial that up to 11. Every single map is trash mob after trash mob, with the same enemies no less. If you're a masochist and play Wrath of the Righteous you will kill literally thousands of the same shitty demon enemies again and again. Did I mention the pre fight buffs often take longer than the fights themselves? Sure you can mod bubble buff, but I'd argue it's better to just uninstall.
