Asking on behalf of my wife: can you recommend any games that feature cats, preferably ones that can be interacted with in any way? By cats I do not mean catlike humanoids like Khajiit or Kilrathi.

Witcher 2 and 3 obviously feature a lot of cats. There is a close up of one of them in a conversation, in Oxenfurt IIRC.

Torchlight 1 and 2 have animals (including cats) that you can send to town to sell loot and buy potions.

Another Eden: The Cat Beyond Time and Space. Despite being gacha title it's pretty much sigle player jrpg. There are hundreds of cats across the world. Even protagonist was cat before he was transformed into human.

Cattails is the best imo.
It's basically Stardew Valley except you're a cat and do actual cat things like hunting and killing prey, defending your territory against other cat colonies, etc.,
