I need an arcade racing game with split screen.

Something simple, split screen. PC or emulatable console, barring ps2/GC, which my pc can't quite handle.

Doesn't have split screen either however. And there's none in Carmageddon 2 which was supposed to be my next suggestion.

F-Zero X, bro. You get to race at breakneck speeds, you get destroy other drivers in the race, and the game has one of the best soundtracks ever. Very simple mechanics, but a heavy focus on precision reflexes to win on higher difficulties. Real easy to pick up and play, however, which might make it ideal for split screen with friends. Unfortunately, you can't do Grand Prix races in multiplayer, but there's still (up to) 4-player versus races.

Whiplash / Fatal Racing. The best split screen racing game ever. Hard to run properly now though, slow in Dosbox.

Wacky Wheels, for something completely different.

And, of course, Lotus 3.

The game is for me to play with my girlfriend. She didn't like Mario Kart much, because she kept driving off the cliffs in the ghost stage, and she's a bit of a graphics whore, so the really old stuff won't cut it.

Lady ain't very bright, so an easy game would be better.

She seemed to like NFS underground, but complained she couldn't play with me...

Funny thing, fucking Mario Kart is harder than NFS Underground.

The Amiga Lotus games have pretty nice 2d graphics - or by 'graphics whore' you mean strictly 3d only? Then you might have to wait for Turbo Run to get released.

The old micromachines (top down) and wacky wheels (chase cam) games are both solid fun. Wacky wheels has weapons but no pit drops like in mario kart. (At worst you can drive into a lake which'll slow you or a wall which stops you dead as far as I recall). Micro machines does have a bunch of places where you can drive off the track and die but that's part of its charm.

Destruction derby (1995) had 2-4 player splitscreen in both race and arena mode. It's acradey but comes with a damage model. I don't think the sequel had splitscreen. Wipeout (1996) by Psygnosis had splitscreen too if memory serves.
