How about you code it up first and make the art second
One day in some game development community I used to frequent I saw some artist saying that he had already created all the assets for an amazing game and he was offering any programmer a 10% revshare to "just make it interactive now."

Will there be crafting? Cutscenes? Player housing?
I don't care so much about the features of the main game. I want minigames. Maybe there could be carnivals or something that are filled with minigames. Or maybe build Pokemon inside this game, and you can challenge all the NPCs to a game of Pokemon.
