Steve gets a Kidney but I don't even get a tag.
So if we found somebody who was prepared to redo this game; what would be involved?. Could you just load up Near Infinity and access all the dialogues through the Dialogue.tlk file and just redo everything?.

Is it just that simple?. Would the work be in mapping all of the dialogue out?.

Modding Baldur's Gate is pretty easy. And yes, you could just do that.
