Minecraft is shitty for adult minds because it has no purpose. It has no purpose because beyond a certain point resources are not throttled.
Faced with the future-certainty that you can build anything, it kind of negates bother going through the motions.
Value gets distributed around autism and ordinary/exta-ordinary artistic skill rather than hard work and thoughtfulness.

However if you enable Superflat mode when generate your gameworld something special happens!

You get a flat world with only grass/dirt layers you can mine.

To get other blocks you have to locate villages to steal/trade for them.

This is a far more challenging approach to minecraft. And ensures a balanced economy of sorts around Emerald training.
Atleast until someone figures out how to make automatic farms etc.

Given the utter scarcity it's a far more reasonable thing.

REMAINING CHALLENGES & SOLUTIONS:

-Who the fuck wants to look at a flat mostly empty world?

Solution: Think of it as your personal canvas where you get to make everything from scratch.
Want a mountain to climb? Build it. Want an ocean to stand in? Pour it.
Also remember the upside is careful logistical thought of how you trade for the right items to get situated.

-It takes retarded amount of effort to initially locate and sell blocks for Emeralds.
Solution: Daily 5x Emerald Reward.

-It takes retardedly long to get certain blocks esp. if you are unwilling to kill the Iron Golems that spawn in towns.
Solution Part 1: Create a small station for trading Emeralds for any of:
A) Bucket. B) Water Bucket. C) Lava Bucket.

Solution Part 2: Create many resource structures that respawn finite amount of the basic blocks ONCE a day.

e.g. 64 cobblestone, 32 of iron ore, 32 copper ore, 16 coal ore. etc

-It takes retardedly long to find new villages.
Solution: Random location teleporters.

-What about being griefed by other players if its an open server?

Solution: Add an obsidian station where you can buy obsidian using emeralds.
Combined with ability to buy water/lava, you can make your defenses.

-What about redstone exploits to get rich or harrass?

Solution: Since redstone ore does not spawn naturally, the server admin/mods would have to
be on the lookout for Villagers who trade redstone.

-Many farms don't require redstone to function. How can these ever be regulated!?

Solution: They kind of can't. Similarly someone who learns to Breed Villagers will probably
get most any item they want eventually.

The beauty of most of these solutions is they require simple use of minecraft commands blocks.
