Pretty much all you have to do is slow their ship down by using the sail ripper shells. (Can't think of the exact name at the moment. Neeeeed sleeeep.) Using the crew killers is good too. Less opposition when you board. :)

Then you just pull up alongside them and an icon should appear that looks like a grapple. Click on it and away you go. It helps to have a captain with a high grapple skill too though. And be sure you are boned up on your swordplay skills as you will need them when boarding. Especially if it's a big ship.
