Weapon skill: smith shouldnt train much weapons other than hammer. Their advantage in dungeon dwelling should be their very versatile choice of weapon, not master of one unless you choose hammer. Training weapon skills defeat the purpose of a blackmith character.

This necessitate the limited inventory for combatants, the very varied types of monsters and challenges, and the need for many more NPC to accompany our MC.

Cooking can be very nice mechanic but dont let it be him the cook. let his wife/girlfriend/saved damsel of distress and tag along, be the cook.

You want him to move but a blackmith need lots of stuffs: anvils, fuel (wood, coals), furnace, ores, raw material. For him to move from one place to another, a moving platform, like a ship, or humongous vehicle drawn by dinosaur, should be in need. Please think of it as a part of gameplay mechanic.
