One of my favorites is from The Witcher too. But its not a quote, it's one of Geralt's love conquest scenes.

It's when he buzzums the miller daughter in that old mill, near the river. The lass is making some sounds. And there are two guards on the city wall, listening to those sexy noises.
One of them say:
- Something haunts the old mill again.
The other:
- Aye. Perhaps we should call for the witcher?...

<it's not a perfect quote, but it looked just like that :] >

I like the spellcaster chants in the IE games:

Icewind Dale & Baldur's Gate Spells:

1) Illusion: "Veritas, Credo, Oculos" = "The truth, I believe, with my eyes"

2) Alteration: "Praeses, Alia, Fero" = "Protecting, another, I bring this forth"

3) Necromancy: "Vita, Mortis, Careo" = "Life, and death, I am without"

4) Divination: "Scio, Didici, Pecto" = "I know, for I have studied, with my mind"

5) Abjuration: "Manus, Potentis, Paro" = "A hand, powerful, I prepare"

6) Evocation: "Incertus, Pulcher, Imperio" = "Uncertain, beautiful things, I command"

7) Conjuration: "Facio, Voco, Ferre" = "This I do, I call, to bring you forth"

8) Enchantment: "Cupio, Virtus, Licet" = "I want, excellence, allowed to me"

"You must gather your party before venturing forth" - BG - no seriously, there were fan pages dedicated to that line:)

She lost her husband to war, her children to famine, and yet still she perseveres...And now she is dead..." - Irenicus (or, gasp spoiler, Bhaal appearing to the player/his child as Irenicus) from BG2 (it goes on a bit more, but forgotten the rest of the quote - villain writing was one the many things that Bioware pulled from their collective ass in BG2 that they haven't managed to relocate since),

Oh, and while this is actually just a quote from Voltaire, its use at the end of Deus Ex (if you side with Helios) was nifty: 'If God did not exist, mankind would need to create him'
