A few good ones:

In Ultima Underworld: "You see an upset spectre named Warren." - Should speak for itself.

In Monkey Island 1: The treestump in the forest maze. - Only in the floppy version, by LOOKING into it you got a good laugh. This was removed in the CD version.

In Monkey Island 3: The hole in the Goodsoup crypt. - Look in it and see where you come out.

In Heretic: Typing "IDDQD". - Make sure you saved first!

In Lands Of Lore: The Hand Of Fate spell. - Shameless product placements were so common in the 90s.

There should be a Guinness Records "highest number of easter eggs in a video game" award. Hell, FO2 could probably compete with products of any art form.

It's not a real easter egg, but I loved the way Mike was done in JA2. After raging about his insane salary in JA1, I was happy to see him gone from JA2 for this very reason. And even more happy to see him back as an ennemy when I didn't expect him at all.

The "Guardian of eternity" in FO2 was also great.

When it comes to in-game jokes and/or Easter Eggs in video games, I think that only the Quest For Glory series can compete with Fallout 2 in terms of sheer volume. Which is whack. 5 games against 1.
