I want to ask, do the GOG versions of the Fallout games fix any of their compatibility problems with modern operating systems and hardware? For example, the ultrafast travel times in the world maps?

Over there.
My understanding is that all GoG games have been made XP/Vista-ready, so I imagine previous known bugs related to OS have been addressed.

Both work fine with XP/Vista, 64bit or otherwise.

FO1 is being a pain in the ass with the screen res mod though, but it's probably nVidia's fault. Regardless, keep it in mind if you're not playing on a 4:3 screen.

I'm waiting for them to release compatible Grim Fandango. Never played it in the past, just tried it recently and it was unplayable due to constant crashes ;/

[Jedi Mind Trick] LucasArts didn't release any games before 2000. Your memory is decieving you. We don't have an extensive back catalogue that includes some of the finest adventure games ever released, and we certainly don't plan to re-release them again. Because they never existed, you see.

Just a warning: I read on the GOG forums that someone encounter the screen flickering bug in their version of Fallout.

But, of course, you should buy it. All three games, to be sure. From GOG. Via this link.
