There's a dev diary over at IGN where Casey Hudson of BioWare discusses some of the behind the scenes part of making Star Wars: Knights of the Old Republic. Here's a clip:

By far the most important question to us is, "Is it fun?" To answer that question, we have a large number of people playing through the game, providing feedback and suggestions for improvements. The QA teams at LucasArts and BioWare do the majority of this work, but we have also enlisted the help of focus testers at Microsoft as well as ones here in Edmonton. Team members who have completed their work on the project help out as well, playing the game as much as they can and using their background as gamers and their very critical eyes to spot problems.

And we all know that LucasArts would never let a lackluster game be made with the Star Wars license.
