Well, you could have the infected produce a drug that makes people go nuts on contact, but the virus would need to infect the entire system to affect another guy, for example:
Guy A is a zombie and bites B --> Drug/poison from guy A's fluids makes guy B instantly crazy and bites guy C, but he doesn't get the drug nor the virus so he will be fine, but if X hours later (fully infected) guy B bites guy D, guy D gets the full package.
A virus needs to use the celular mechanisms to selfreplicate, and no matter how cool the virus is, the host hardware will limit it's speed (hours, at the very least).
A celular agent like a fungus will need some time to affect the host's behaviour (this could be fast, from a toxin that got into the wound from the attacker), but will need more time to fully invade the host (at least to the point it can affect another hosts, like by reaching the saliva).
If you are gonna have your instant zombies you better have a good explanation or just go with ALIENS or WIZARDS or ANGRY GOD. But anyway, I'm just beeing autist about the infection speed.
