From memory

''Now that you finished the game, go read a book and get some culture.'' Knights of Xentar

''You are going to hell Bernhardt.''
''I was born there.'' Warhammer: Dark Omen

''Eliot, you idiot!!!'' Jagged Alliance 2

''I never made excuses for my killings, but these hunters presumed the role of judge and jury. HYPOCRITES. Very well then, let's see how they like me in the role of executioner.'' Legacy of Kain: Blood Omen

Two more recent ones, one poignant and one inspirational:

''It was if part of you burned with the Punic city. A mere few days later you silently followed its fate, peacefully in your sleep.'' Legionary's Life

''However, keep in mind that I never lose - I either win or I learn.'' Heads Will Roll: Reforged

Merida, again
Almost every line from the companions in BG1.

Absolute peak soul.

I always liked Eldoth's initial greeting. Slimy motherfucker.

"Gentlemen, gentlewomen, may I introduce myself? I am Eldoth Kron."

It was funny when Shar Teel cut him open.

I also like most of Xzar's stuff, except when he makes the stupid voices.

Almost every line from the companions in BG1.

Absolute peak soul.
Some of my favourites:

"Your voice is ambrosia."
"I need an ale."
"You point, I punch."

Not from a companion, but who could forget:

"My tavern is as clean as an Elven arse".

The western road to Erromon.
"Apathy is death."
"A culture's teachings, and most importantly the nature of its people achieve definition in conflict. They find themselves... or find themselves lacking."
"I cloak myself in blackness, I arm myself with hate."
"Fat people always lie."
"Great jumpin' Paladins o' Tyr... I'm done for."
"Murder most foul crafts victory most fair!"
"Boo likes the forest."

One exchange in the Witcher 1 that I loved was near the end of the game in the icy hellscape, Jacques and Geralt were verbally sparring and Geralt's juvenile Gen X cynicism gets utterly btfo'd.

Jacques: "I see you have met our degenerate great grandchildren... Do you understand now why you cannot oppose my plan?"
Geralt: "You have yet to say how all this ice justifies your crimes."
Jacques: "Only a grand plan pursued without hesitation could save humanity from what I saw in my visions."
Geralt: "Trust your daydreams that much?"
Jacques: "I never asked for these visions, this gift."
Geralt: "But you chose how to use it."
Jacques: "Many times you insisted special gifts should be used for just causes. I chose the most just of causes - saving millions of lives."
Geralt: "And pursued it by ending hundreds of others. How many more do you aim to condemn?"
Jacques: "You have no notion of the approaching cataclysm. The spirits of the dead wander here. Tell them they had no right to survive."

Irenicus saying "For years, I clung to the memory of it. Then the memory of the memory. And then nothing. The Seldarine took that from me, too." has been permanently seared into my memory since I first played Baldur's Gate 2. Incredibly poignant line, delivered brutally and emptily.

Nothing :obviously: about Dybowski's navel gazing sims, and Pathologic 2 will never be completed.

That's very nice and has nothing to do with my post. All you have to do is read the paragraph of text and appreciate the thought expressed in it.
