I started playing this again recently, it's pretty tough? How am I meant to go below the first few levels?

Explore mode. See what doesn't kill you instantly, then try it in a real game.

Also, feel free to eat most corpses. Avoid anything humanoid and/or undead, but stuff like floating eyes, lichens, and the occasional newt will help you prop up your food supply.
