Last e3, I saw a boss creature that hurled corpses at you.

So far in the E3 previews it has always been the SAME pilars being knocked over by the SAME golem/garg utimately ending on the SAME balcony colapsing, very probable its scripted, and im pretty sure they said they wouldnt allow total freedom on blowing things up a few interviews ago, its not that bad but i would like the garg to sometimes try to take the balcony down but other times just super jump and land over it (damaging it as well) and other times start throwing boulders/chairs/hobos at you until you go down instead.

If it's a demo then it's probably recorded game play, so then it makes sense right, and then it isn't scripted right?

Not exactly, Troika had exhibitors play through parts of the game in front of you. It wasn't a recording.
