Dragonspear is tolerable, and half of the people who hate it are /pol/ tards who never played it anyway.
The concept of Dragonspear is good, but it would have been better if the original design team would have made it TBH... but some of the content of the cancelled second expansion pack for BG did make it into Dragonspear.I honestly think if Dragonspear had been released as an "interquel" back in the day it would have been really highly rated.

For some reason I cannot get into BG2 anymore as much as BG1. The less "epic" gameplay of BG1 seem to fit me much better. Cozy Sword Coast.

For someone who never played the original versions, would you guys recommend the EE versions over the base versions?
Nein, njet, no, nej, etc. Get the original versions from Gog and use the fixpacks from Gibberling 3 site:

Saves money and all you need is maybe 5-10 minutes setting the game plus the fixpack up. If you fancy you can try with mods but my recommendation is just play the original version with core fixes.

Low level D&D encounters are.... a bit much more fun end enjoyable to many people. They are a bit much more less tactical, but still more enjoyable.

You may just prefer a lower-level adventure, and there's certainly nothing wrong with that. Some players like the feeling of just surviving, using their wits and more limited tools to scrape by. Other players love the higher-level experience of instagibbing a Lich in melee before he can fire off that Time Stop. Each has their merits, though I find the latter harder to design for.
What I like most about the Baldur's Gate games is the transition from one to the other. That feeling of importing into Shadows of Amn and quickly realizing that, while you've grown so much; the danger is greater than ever.

But yeah, Siege of Dragonspear is in the lvl range you guys claim to like. Some aspects of it are superior to both BG and BG2. Why don't you give it a whirl - BECORZ MIZAYNA?
