There's no mystery to it. Early video game composers didn't have many sounds, tracks or disk space to work with, so they had to concentrate on the actual melody and harmony part.

Its how funny how with each iteration the melody gets buried deeper and deeper beneath the detail and the popamole reverb-like effects. The Adlib sounds like the most balanced among the older card. Everything after the M-32 sounds like shit too.

Warcraft 3 was a shame in this regard. There's only one track for each race, and they're pretty bland.

And when exactly was it common? Keep in mind that when we're talking about the oldies, we usually mean the brilliant games of the period. Much crap was released back then too, only the crap titles (with crap music too) faded into obscurity.

EDIT: According to youtube I'm on the last level of Extase, that is quite surprising.

EDIT 2: The tracks from Dune are, in order:

0:00 Sign of The Worm
2:00 Spice Opera
3:23 Dune Theme

6:23 Free Men
7:30 Chani's Theme

At least those are the names from Exxos - Spice Opera. I think I generally prefer the game versions of them, although the album has it's own charms.
