Ain't it the truth? I've been down that rabbit hole many times until I've finally given up.
These days, I'm just thinking, why wouldn't I just install and mod Kenshi instead?

waiting for someone to make a 'new world' kenshi mod the game's awesome the first few times but once you've explored the world you kinda know what to expect everywhere

actually idk why the dev, instead of taking 20 years to make a totally new game for kenshi 2, doesn't just make a new world with mostly the same assets, add some new regions, and call it a day. the base game is good enough and doesn't really need changes
also kenshi ost is so fucking peak

I haven't played it in a while, but from what I remember a few general QoL mods such as Living World and better pathfinding, high res textures if you swing that way.
Ultimately, it depends on what you want. What worked for me is first figure out what you want to do in the game, say - bounty hunting, then look for mods that give you QoL and added content for it.

It's the pitfall I know from Morrowind and genuinely want to avoid - instead of building the ultimate game before you actually jump in and play, start playing and make a mental note
of stuff you'd like to see expanded. If basic gameplay doesn't work for you, not amount of modding will make it magically click into place.

Try Kenshi Genesis. It's not a whole new world, but a total overhaul going since 2020. It mostly adds shitloads of smaller mods, most of them fairly decent. Keep in mid though Kenshi modding scene is minuscule, so the content quality of said mods varies greatly, but it get's the job done - you'll see stuff you've never seen all over the world.

Question #5: How do I make combat more like Bannerlord or Dark Souls? Action based and hard.
I can do without action-based combat, but I still want the game to be hard.
Probably modded skyrim is your best bet, there's some interesting combat mods for it like the sekiro mod:



Though since you have a 4080 super, might as well go with the new black myth wukong?
