There is an interview that clears up the questions I had about the external "talent" like Rhianna Pratchett that PB hired for the dialogues.

I think some of it comes down to the translation, the gameplay translates, but the story, characters and dialogue often don’t convert directly. Previous games had just had a straight translation meaning some dialogue was a bit clunky, difficult to understand or contained jokes that worked in Germany but made no sense in English. For Risen that was something they wanted to change and we have.
So this will thankfully not affect me. No Rhianna Pratchett for me, thank you, but no thank you. I always considered the Gothics to have the best dialogue from all games I've played. (Well, G3 didn't have
consistent good quality. But that only led to some genericness/soulnessless for a few dialogues. Nothing cringeworthy.) Probably because they talk very much like I/my friends do or would want to *shrug* And maybe because I played PS:T in German
But non-German players always criticised the stilted dialogue and generally didn't like it much. I'm actually quite interested if it will be different this time or if it will simply be a waste of resources.
