FTL was 2 guys + music composer & Chris Avellone helped with expansion.

"Mundaun" was made by one guy, though he received some help with programming and music.

"Braid" was made by one guy, Jonathan Blow.

iirc "Axiom Verge" was developed by a solo dev as well.

Dominions 5 is said to have been created by two guys, and a few other people who worked on maps and random events. Which is amazing considering the scale and depth of the game.
