A pity most of the games are either post-apoc or just have a small/er desert are. I was hoping for an obscure hidden gem in the fantasy department.

Well it's not technically a desert since you get there by sea.

Tales of Maj'Eyal has a desert section. Among other exotic sections.

Mars: War Logs and Technomancer.
Water is the most precious thing on Mars, both games have a lot of desert areas.
The later even has parts with crossing martian red sands in a deadly chase with the sun.
