Runs with Wine (just tried it) but there isn't really a point in doing that.

There are alternative clients available on Linux like Lutris, Minigalaxy, and GameHub, but none of them allow you to actually patch your games. You have to re-download the entire game whenever there's an update. That's reason enough for me to not use GOG for anything other than actual old games.

Jedi Knight is fucking awesome. The graphics haven't aged too gracefully, but once you manage to get past them, it's a remarkably good game. Fuel Station Launch (which also happened to be the Demo way back when) is still one of my all-time favorite levels in an FPS. Even the cheeseball FMVs inbetween missions are pretty cool. It's such a nice throwback to a time when you could unironically enjoy Star Wars because it hadn't been thoroughly pozzed yet by the prequels and the endless stream of soulless JJ Abrams/Disney cash-grabs.

BEWARE! as it's still kinda wonky on modern systems. On the plus side, this is one of the few games where gog buyers get the VIP treatment, since their version includes the Mysteries of the Sith expansion by default, whereas it's sold as DLC on Steam.

Éric Chahi's Heart of Darkness; pretty good game. I'd love to see it on GOG.

No relation to The Heart of Darkness, a porn game that GOG was advertising a few days ago.

I have no idea if any Star Wars game is ok. Opinions?
The Dark Forces titles and Jedi Knight 2 are all classic FPSes. Dark Forces II in particular is one of the best, the level and secret design is unsurpassed.
Empire at War is okay. I couldn't tell you why its bland or why it doesn't work, but it just never grabbed me. Galactic Battlegrounds is something I really liked, but its just Age of Empires II with a few Star Wars modifications in it, with all the caveats and issues that come with that. The flying units basically just sit there whenever they aren't in motion.
Battlefront I & II are class-based MP shooters with a couple of single-player campaigns in them. They're pretty good for what they are.
Lego Star Wars is a Lego game with a Star Wars theme. The Star Wars titles were the first ones to be made in the series. No idea what improvements are included with the version they have, but the basic gist is that playing a few levels at a time is fun, playing multiple ones is boring.
I haven't played any of the others long enough (or recently enough) to give an opinion.

Some of those reviews. Now why the SSI tag and not Strategic Simulations like the others. It is like some lazy guy put these together. Still no Allied nor Star General.
