Hmm. Some bandit chiefs are supposed to be retarded strong even in vanilla, but that's a bit extreme even for them. I don't think Combat Evolved is the culprit since it should be just combat settings and AI. Maybe SkyProc combined two mods to give them much more defense than they should have? It happens with some draugr if you're not careful when using Immersive Creatures + Requiem, for example (the first gives them armor, the latter gives them natural damage resistance, combined they turn the draugr into luftwaffe panzers). Next time you meet one of those guys, open up the console and click on him. The first two digits of the hexadecimal ID will tell which mod they come from (00 for vanilla). An useful mod is Mfg Console, which lets you see their data and stats in detail.
Learned invisibility and returnd to soul cairn, the place became bearable. To be fair, I haven't met many trash mobs besides soul cairn & main quest & labyrinthian. All in all, requiem IS the best overhaul mod I have ever used. A pity it cannot remove the retardness of quests though.
I just tried the Ultimate Combat mod and it is good, not an extreme as other combat overhauls but still a little wanting...I like the mechanics but I wanted a more harsh stamina system since the regeneration is fine but the attacks and blocking take too little stamina to warrant the regeneration anyway; after fighting 2 foes and swinging my weapon for like 30 seconds the stamina bar wasnt even at the middle part... Any suggestions on that?
This. I'm out of stamina in skyre after 10 seconds of fighting humans (450 hp and 250 stamina). Though it regenerates fast when I'm backpedalling diagonally with the shield up. In requiem you wouldn't be able to do that since running consumes stamina.
I've tried looking for it and then I've found the playable skeletons mod instead. I have to say, it's a definite improvement over the lizards with boobs.

Okay, there is now way I am reading through 172 pages, and search has been broken ever since we switched to XenForo.
It's the summer time and I am on vacation and feel like playing a hiking sim. Concisely recommend the mods I should use on my first time through Skyrim. Keep in mind I am not interested in a hardcore difficult experience, just an enjoyable hike. Question two: what do the DLCs add / are they worth getting? They seem a little expensive. (Before you ask - no, I didn't buy Skyrim; it was a gift from years ago.)

Without serious mechanical overhaul Skyrim is rather bland, though, and quite a bit of a mess - if you want to make it interesting you might as well make it challenging, remove level scaling, handplace some unique items and enemies and so on.
If you want to play it vanilla just play it vanilla.
Dawnguard - vampire/vampire hunter questlines, failed attempt at emoshunul engagement, some locations including Soul Cairn, some new spells, crossbows, a few new items, vampire lord form.
also prerequisite for arguably the best overhaul which is a good enough reason alone to recommend it.
Dragonborn - opportunity to revisit Solstheim, a lot of Morrowind nostalgia, entire new landmass, opportunity to visit Hermaeus Mora's daedric realm (no free roaming there, though) during its main questline, a lot of typical expansions stuff, decent integration into the base game and one annoying asshole antagonist
nomming your delicious souls
.
It visibly took a lot of effort to try and maintain consistency with Bloodmoon's Solstheim and make it more interesting than BM ever was at the same time - for this reason I can recommend it.
Hearthfire - Sims: TES edition.

DLCs are mandatory for large number of mods so you will need them if you plan to do some heavy modding. If you do plan to buy then I think its more cost effective to buy Legendary Edition then each DLC separately.
Requiem is a must have because it adds to much to the game (including removal of level scaling), it makes game much more challenging but there are options to make it a breeze.
Also mandatory would be SkyUI and Unofficial Patch, also ENB, Climates Of Tamriel and Skyrim Flora Overhaul (for visually better hiking experience).

Not really.
(I use ENB, but just because it's prerequisite for some stability enhancer, without altering the vanilla graphics. Granted I have an LCD with optional sharpening and color enhancing filter which massively improves Skyrim's default looks).

Might be matter of preference but to me the game just looks far better with certain ENBs. I have been using http://www.nexusmods.com/skyrim/mods/15983/? and personally cant imagine playing Skyrim with vanilla visuals.

Maybe it's just me but I hate fucking around with purely cosmetic shit.
It's physically draining - tons of time and energy wasted on completely intangible end result.
Also the one you linked is some hopeless, DoF infested shit.
If there is one thing vanilla Skyrim does well visually it is clever and moderate use of visual gimmicks.

Well I took me whole 5 minutes to install it and I choose the no DoF option from several choices. The game looks far better then vanilla where every region had the same color palette aka 10 shades of grey.

Well ok, but I can accomplish just as much plus sharpening of Skyrim's noticeable blurriness by setting my LCD to "Game" mode.
And DoF in the screenshots shown IS downright nauseating - good to hear you can turn it off, but won't it, in turn, break underwater visuals? Vanilla uses DoF a lot for those.
