Most of Skyrim's soundtrack actually kind of sucks to listen to on its own, even though it suits the game's atmosphere perfectly. There are some really good themes (including some that aren't used in-game for some reason) and I like the tavern music, but too much of it is just kind of ambient background noise. Morrowind and Oblivion were a lot better that way, even if they went a bit too bombastic at times.

Mark Morgan's work on Fallout 1,2, and Planescape Torment, together with that dude who did "Smoldering Corpse Bar Theme" and "Civic Festhall Theme", though that seems to be favorite for many people.
Also, Witcher. That one has some good pieces.
Sadly, I cannot recall any other at this moment. I hate when that happens.

As for non-RPGS...
HOMM II, III, StarCraft, Dominion: Storm Over Gift 3 (anyone heard of this?).
People will probably rape me for this, but I like this piece from Fallout 3. Also used in NV. This particular track is one of the few things in FO3 that is actually good, even though it is in sharp contrast to the music of the originals.

I don't remember hearing that in NV.

What is up with the commenters talking about nostalgia? Fallout 3 was released just a couple of years ago.

I have barely played NV, but I'm pretty sure you can hear it while you are trekking through the wasteland in nighttime. Or perhaps it was some similar piece, maybe a bit remixed, I dunno...
Though I could be wrong.

I often listen to a playlist of Fallout 1 and 2 music when playing some strategy games and also when playing PnP. If you're lazy, here's it on youtube. Both one and two, without doubles of what's in both games. http://www.youtube.com/user/Vihakosto?feature=mhum

Why I like these songs a lot, they're haunting, atmospheric, don't have lyrics and they're sort of silent.

+1 for Metallic Monks  Possibly the best video game theme ever.

Also, assuming that's your youtube account, do you know what's up with "katiegirl"? I don't know who the fuck she is yet she added me and apparently you as well to her friends list (despite the fact that niether of us have any uploads...). It's really bizarre - at first I thought she added me by mistake or something, but now I see this random Finnish account also has her as a subscriber :?

A lot to be said about JRPG's, both good and bad, but many of them have beautiful and complicated soundtracks.
Some which has't been posted here:

FFIX, Loss of Me: http://www.youtube.com/watch?v=BRpGoFISvok

Grandia 2, Deus: http://www.youtube.com/watch?v=PgtE3opyUT0

Chrono Cross, Another World: http://www.youtube.com/watch?v=ROKcr2OTgws

Lunar Silver Star, Luna's Song: http://www.youtube.com/watch?v=x-oeKgGy2AY

Right, back into the real world. That one from MMVII always felt epic for me: http://www.youtube.com/watch?v=Anoc67QPMaQ
Deyja was spooky too: http://www.youtube.com/watch?v=qVqbnGWq ... re=related
