5E extremely simplifies bonuses and progressions: you no longer have an attack bonus and various saves bonuses, instead you have a single bonus (called proficiency) that goes from +2 at level 1 to a maximum of +6 at level 17. Everytime you roll to do something, if you are "proficient" in wathever you are trying to do, you add your proficiency bonus to the relevant ability bonus for that task.

Characters' abilities are capped at 20 (which gives a +5 bonus) and there are very few ways of getting higher scores (very few means just two or three in the entire game).

Another important thing to know is that there are very few ways to get a bonus on your roll (a couple of spells and class features), so usually your maximum bonus on any given roll can't exceed +11.

Which is boring, stupid as hell, and kills all sense of diversity and power progression.

I presume the process went something along these lines -> WotC wanted to make a AAA D&D video game, perhaps an RPG -> The only viable candidates were Obsidian and Larian -> Obsidian's track record is of financial failure with their only RPG franchise -> ergo Larian who have had 2 successful RPGs already -> perhaps Larian and WotC decided together a Baldur's Gate game would be the most appropriate due to being the D&D game with the most name recognition. This doesn't have anything to do with AAA "being a good thing" or me implying that, or whatever other nonsense goes through your head on a daily basis.

How does character development in the 5th edition work ?

Technically, it doesn't have any outside of leveling up. Feats are an optional rule (but Larian will use it), and a 20th lvl Ranger is not significantly different than any other 20th level Ranger.

5e has optional mechanics like Faction and Piety systems as alternate forms of progression, and Larian will have their own ideas on this such as the Tadpole Skill Tree.

The only optional mechanic to redeem 5E is to revert it to 2E or, maybe, 3. Those editions had glaring flaws but highly redeeming qualities. 5e is babies first PnP campaign.

In real-time: If you move the mage away from the enemy that is trying to engage him/her, you can have a character that simultaneously is engaging the moving enemy; instigating at least one attack of opportunity every six seconds (infinitely until the enemy dies).

One attack of opportunity every 6 seconds is not that much [infinitely]. Especially since you think an enemy can walk up to the mage in one turn [YES, in turn-based, compared to real-time]. It's either the enemy reaches my mage in one turn or takes long enough to get there that it dies from attack of opportunities. The fact that aoes exist like that is nice though because it works both ways. Sometimes it's worth the risk to take the extra aoes to get rid of a mage. [The mage YOU are running towards with a warrior IN REAL-TIME will not simultaneously move away so that an enemy get infinite AoO on your warrior (Attack of Opportunity is NOT shortened to AoE!!!!)]
