The thing that scares me the most about Dragon's Dogma 2 is the possible absence of Fournival. I only poised through DD1 and remember it because of Fournival. Such an amazing husbando. I honestly wouldn't even care if they just rehashed him for the sequel.

I suck at this game. I've done the same early-game quest 3 times in a row to die to a oneshot from a mage somewhere in the dark. Every time I have to redo the whole quest, which takes 10-15 minutes until I reach where I died last time.

What am I supposed to do? Can I do checkpoints by saving every 5 minutes? Is this a savescummy game until I "git gud"?

I can't think of any situation that fits that description. Enemy mages are incredibly rare in this game. What kind of place are you in and what sort of spell is killing you?

Earlygame, in the first quest into Everfall. There's one before the second door, and several after the third. On the second door there's also a large monster that I figured already must be avoided. Sadly, my pawns didn't and they were thrown into the middle of the room, where I couldn't resurrect them soooooo I ended up being owned and forced to reset the quest.

Ah. You can actually trick that guy into falling off the edge himself, but assuming you don't want to dick around with things any more than you have already, I'll just point out that there are also multiple paths to get down and luring enemies to better terrain is almost always an option.

Checkpoints occur automatically like loading new areas and such. The stones you get pawns from also create savepoints. I can't remember the distinction between the two types of saves though. I know you can do some savescumming shenanigans with chests by reloading if you get the wrong item in bitterblack isle, and reloading the checkpoint save generally never set me back that far. But I also never had much trouble in the game outside of BBI, which is really segmented.

Are you using healing items? They're really OP in this game. I have a hard time imagining you got legitimately one shot by a mage unless you were at pretty low hp already and trying to rely on healing magic alone.

'pparently I was underleveled, because just getting down the stairs and forcing the monster to die leveled me up three times. And a fourth on quest completion. I also chose not to pull the lever, doing the skeletons/mage route, which 'pparently is harder for my party too.

Killing the ogre there is definitely an optional challenge. I think the easiest way to do things is to take the ogre path, but rather than kill him, just juke him and close the door behind you. You can fight the guys in the twisty side paths on the way back, giving you some positional advantages iirc. But there's all sorts of bullshit you can do in this game, like using consumables (throwblasts are broken), dungeon hazards like explosive barrels, being prepared with specific monster weaknesses, cheesy terrain abuse, and other weird tactics.

Levels generally don't matter too much, but you could have gotten there at a pretty low level if you didn't dick around with sidequests beforehand. It's usually the equipment and vocation levels that really matter, since the former gives you the bulk of your stats and the latter gives you more options.

Did you miss the option to "quit and save" in the menu? :M

Although if you haven't completed the quest relating to Quina and the Witchwood, you should do that prior to completing the Everfall quest.

Itsuno said that after finishing up DD he was indecisive between making DD2 or DMC5. He choose DMC5 so now it's pretty obvious he'll make DD2. And considering DMC5 took 5 years, it's safe to assume DD2 will take around 5 years as well.
