Dark Souls isn't a game about grinding, its about learning and adapting. If you struggle to get to a boss, formulate a strategy for the journey. Every time you die and have to slog through a section again, you're picking up bits and pieces of tricks that will enable you to maximize your runs. Same goes with bosses; you learn their 'tells', their phases, positioning, etc. all from just fighting through them. And once you're comfortable with your grasp on them, its a matter of execution. I understand you getting frustrated at dying and repeating ed nauseam, but if you aren't learning something with each death then it unfortunately is a failure on your end.
Also for your technical complaints, there's a camera option that fixes the "going behind stuff" problem I believe. And I'd recommend an Xbone controller, since I love the shit out of them and they are pretty much just a better 360 controller. Plus no D-Pad issues.
It's fine that you don't enjoy the game, but as others have bluntly pointed out you aren't the greatest Souls player. Which is okay, cuz they just video games u feel me fam
