You can see the (horizontal) inner wooden board that support the outer wooden boards - just above the scorpion right pincer.

You indeed have that option, as was already mentioned in this thread.

Hope the wasteland demo showed off the fact the UI elements are movable and customisable.

Yes, you have that option. Each UI element can be freely dragged and dropped.
